By format. Oven ranges — mainline sauté plus oven work; 4 open burners (GH100) or 6 (GH101) over a thermostatic oven; NG or LPG per SKU; canopy required; clean burners and trays, check door gaskets. Griddles — breakfast and flat-top volume; plates from 15″ (GE754) through 24″ (GH105, 20 mm plate) to 36″ (GH106); allow grease management and hood capture; scrape daily, season the plate, empty trays.
