Select format: range, griddle, chargrill or salamander.Match width (24–36″) and burner/zone count to your menu.Confirm gas type (NG/LPG), total MJ/h and electrical (10–15 A if needed).Plan canopy size, make‑up air and clearance to combustibles.Stock consumables: knobs, valves, grates, scraper blades & drip liners. By format. Oven ranges — mainline sauté plus oven work; 4 open burners (GH100) or 6 (GH101) over a thermostatic oven; NG or LPG per SKU; canopy required; clean burners and trays, check door gaskets. Griddles — breakfast and flat-top volume; plates from 15″ (GE754) through 24″ (GH105, 20 mm plate) to 36″ (GH106); allow grease management and hood capture; scrape daily, season the plate, empty trays. Chargrills — sear and branding; 15″ single-burner (GE755), 24″ (GH103) and 36″ (GH104) radiant models; check hood capture and clearance; brush grates, empty drip trays.
