A heat condensing unit is fitted, designed to condense steam as the hood is lifted instead of releasing it into the room. The cabinet is stainless steel, the machine is listed for a 415V three-phase supply, and the 2035 mm open height suits a standard bench-through installation. The M2C suits venues with a dedicated wash-up bay and steady rack turnover through service: hotels, clubs, aged-care and hospital kitchens, function centres, and mid-to-large restaurants. The passthrough format assumes bench space either side of the machine for dirty-in and clean-out flow. If your wash-up is a single corner with no run-off bench, an undercounter machine is usually the better fit.
It is designed to condense the steam released when the hood is raised, rather than venting it into the kitchen. Confirm your extraction and make-up air design with your mechanical contractor; a condensing unit does not by itself determine your canopy requirement.
