Your new trolley arrives, but the bakery trays you already own will not sit on its runners.
Match the tray format first, then check loaded height and weight. Choose a bakery rack for its listed baking-tray format, or a 1/1 GN rack for full-size GN pans.
A taller rack can offer more positions, but deep pans and heavy batches can reduce the number you can use together. Here is how to turn your existing trays into a useful buying brief.
GN or bakery trays: which rack should you choose?
Buy around the trays you will keep using. The Vogue S373 1/1 GN baking tray is listed at 530 × 325 mm. Bakery trays can use a different format. Compare the tray's outside rim with the rack's supported format and runner arrangement.

| Your trays | Start with |
|---|---|
| 1/1 GN pans | A rack listed for 1/1 GN, such as Vogue GG498 or U376. Check the depth and lid you use. |
| Bakery trays | A bakery rack listed for your tray format. Compare Kitchen Knock 397161 and confirm the tray rim sits securely on its runners. |
| Both formats | A rack with explicit support for both, or separate racks. Ask for the loading arrangement for each format. |
| Smaller GN pans | Confirmation of the exact supports or carrier required. Give KW the GN fraction and the pan's outside dimensions. |
For the three starting points above, see the GG498, U376 and 397161 product pages. For pan depth and solid versus perforated choices, use our 1/1 GN pan guide.

Next step: photograph the tray label and rim, then measure the outside length and width of one tray from each format you use.
Check the loaded tray, not just the empty pan
Food, lids and handles all need room between the runners. A shallow empty tray may slide in easily while the same tray of tall pastries needs a larger gap. A deep GN pan may occupy space beside several runner positions.
Ask KW for a loading layout using your actual pans on the Vogue GG498 or Vogue U376. Include the usable clearance above lids, handles and the tallest food load.
On the GG498, look at the space between the runners and the bar across the front. Ask how your loaded tray clears the next level and how the retaining bar works with its rim.
Ask for the usable loaded height and the positions you can fill together. Shelf clearance and the distance from one runner to the next are different measurements; dividing pan depth by an advertised gap can give a misleading tray count.
Next step: measure your deepest pan with its lid fitted and your tallest loaded baking tray. Send both heights with the tray photos.
How many filled pans can you move?
Compare loaded weight with the trolley's stated capacity. Include the pans, lids and food that will travel together.
Multiply the full weight of your heaviest loaded level by the number of levels you intend to fill, then compare it with the trolley's stated load capacity.
The U376 offers many runner positions in a tall frame. Compare usable spacing and filled-pan weight together; counting the visible runners gives only part of the answer.
Ask KW to confirm the loading arrangement, total-load rating and any individual-runner limit for the exact trolley. Include distribution, tray retention and movement along your route.
Next step: weigh a typical full pan and your heaviest full pan. List how many of each need to travel at the same time.
Send this tray-fit checklist before ordering
A tray photo and a measured load list are more useful than asking for a “large trolley”. Start with the stainless steel trolley range, then send the details below for the exact model you are considering.
| Send to KW | Include |
|---|---|
| Tray and pan fit | Model, format, outside rim measurements and a side-on rim photo. |
| Loaded height | Pan depth, fitted lid or handle height, and tallest food load. |
| Batch weight | Filled weight per pan and the number carried together. |
| Movement route | Door and lift openings, tight turns, thresholds and parking space. |
| Exact order | Trolley SKU, supported tray layout, brakes and retaining parts, assembly requirements and included items. |
For a full-size GN baking-tray example, see the Vogue S373. Use the trolley's Key Specifications to compare its overall dimensions with your route. Our general trolley guide covers the wider choice between service, platform and rack trolleys.
Next step: send your tray photos, loaded heights, weights and route measurements through KW's contact page. Ask for confirmation of the exact tray layout and what is included before ordering.
