
A kebab machine can have enough room for the planned cone and still leave a venue short of service capacity. The queue may form after heating: at carving, a required second-cook step, hot holding, assembly or the changeover to the next batch.
That is why cone size and burner count should not be treated as shorthand for portions per hour. Start with the busiest service interval, map every handoff that has to occur inside it, then ask whether the machine and surrounding station support that documented route.
Find the handoff that sets the pace
Define a real interval from the venue's own trade: for example, the rush between an order spike and the point at which the line settles. Record demanded serves during that interval, portion specification, order mix and any batch change. Use observed venue data where it exists; do not convert a machine's maximum cone mass into saleable portions.
Now walk one serve from the cone to handover. Who carves it? Does the venue's validated process require sliced meat to pass through a separate cook step? Where can cooked meat wait, under which control, and for how long? Can assembly keep pace without the carver abandoning the machine? A machine upgrade cannot solve an unmeasured bottleneck elsewhere in that route.
The reasoning weapon is a chain, not a formula: planned batch → active heating → carving → validated cook or hold control → assembly → close-down disposition. The weakest evidenced handoff defines what remains unresolved.
Build one peak-service evidence chain
Complete this record with the kitchen manager, the food-safety owner and the equipment supplier. It is deliberately source-labelled: a figure without an owner or test condition is not ready to become a purchasing requirement.

Read the table horizontally. If the demanded-serves record is firm but carving pace is unknown, the answer is not automatically a larger cone. If the food-safety route requires a separate step with less capacity than the rotisserie, the station brief must address that step. The chain prevents one impressive specification from hiding an unevidenced handoff.
Keep the food-safety route separate from the machine claim
FSANZ identifies doner kebab as potentially hazardous food and highlights the risks created by poor hygiene and temperature control. Its Safe Food Australia Appendix 4 guidance recommends thawing meat before cooking, cooking to 75°C, holding cooked slices at 60°C or hotter and giving sliced meat a second cook.
The same guidance recommends keeping raw and cooked utensils separate, holding sauces and salads at 5°C or colder, using smaller batches and not cooling an uncooked remainder on the spit for use the next day. These are food-control inputs to the service design. They are not proof that a particular machine will deliver a stated number of serves.
Translate the venue's applicable food-safety program into observable steps: where the measurement occurs, who records it, what happens when a limit is missed and how product is protected while the issue is resolved. Confirm the route with the appropriate food-safety authority or adviser for the venue and jurisdiction. Do not edit the process simply to make a preferred machine appear adequate.
Turn the chain into a machine-and-station brief
Once the service chain is mapped, separate what the rotisserie must do from what the whole station must support.
For the machine, record: the planned batch range; the exact operating configuration needed; site services; physical envelope; permitted clearances; cleaning access; and the model-specific operating and servicing evidence still required. For the station, record: carving position, any separate cooking or holding capacity, assembly space, raw-to-cooked separation, utensil change, monitoring access, drainage or cleaning needs and the staffing assumption during the busiest interval. Include ventilation and utility questions for the supplier and qualified trades; do not assume a connection requirement from a product photo or fuel label.
For acceptance, record: what will be observed during a representative service, who will decide whether each handoff passed and what evidence triggers a hold, process change or equipment escalation. A proposed output figure is only useful when its batch, staffing, process and test conditions travel with it.
Use four answers to expose a false shortcut
Before asking for a shortlist, check that the brief can answer these questions in plain language:
- What must leave the station during the busiest interval? Use venue demand and portion evidence, not a cone-capacity conversion.
- Which handoff currently limits that result? Name the observed or still-untested constraint.
- Which controls cannot be traded away? Carry the validated cooking, holding, separation and close-down route into the design.
- What must the supplier prove for the exact model? List unresolved load, configuration, installation, cleaning and service questions.
If one answer is missing, label it as a test or decision still due. That is more useful than filling the gap with a nominal kg/h figure that has no stated service conditions.
Take the service brief to the current range
The brief should now be compact: busiest interval, batch plan, each controlled handoff, site constraints, acceptance method and unresolved evidence. It allows a supplier to challenge the right assumption before a quote is treated as the answer.
