Tilting angles the cooking vessel so liquid or food can discharge into a correctly positioned container. It can reduce manual ladling and lifting, but staff still need a stable receiving vessel, a clear pour path and control of the flow to prevent splashing.
Start with the normal recipe yield and the maximum practical production batch, then allow working space for stirring, boiling or simmering. Check that the finished amount can be received, portioned and cooled safely; do not choose a larger pan solely for an occasional oversized recipe.
